Aanat is ASMI cookery course trainer. He has significant industrial and training experience on Australian and French cuisine. Today class is a practical class for cert four international students , it will help students to develop skills and knowledge on how to prepare and cook meat dishes, including how to use kitchen equipment and facilities. In office, Aanat gets straight into his daily routine, after putting on the uniform, the most important thing is to check and looking over the training plans for today; and to find any reasonable adjustment the might happens, such as food material and menus. Arriving early, also helps Aanat to have time to think how to help students to learn in a supportive environment, by engaging them in meaningful cooking activities. Eg, working out how to encourage and manage students’ learning behaviors, based on students’ expectation and learning outcome.

Today's practical includes 4 dishes of SITHCCC014 Prepare Meat Dishes This unit describes the performance outcomes, skills and knowledge required to prepare and cook a range of meat dishes following standard recipes. It requires the ability to select, prepare and portion meat, and to use relevant equipment, cookery and food storage methods. The meat dishes for international students to prepare include: Moroccan-style lamb shanks with couscous Wiener Schnitzel with Pommes Frites beef skewers cottage beef pie Performance criteria describe the performance needed to demonstrate the achievement of the element. 1. Select ingredients. 2. Select, prepare and use the equipment. 3. Portion and prepare ingredients. 4. Cook meat dishes. 5. Present meat dishes.
